The issue of the Fact Files released in October 2014, meaning the Kenobi vs Grevious section is published 6 months after the takeover and is clearly canon in spite of the excuses people generally make to classify earlier issues in the fact files as Legends

This should clear up any confusion. The notion that Mace ended the fight via bfr because he was being pressed by Grevious being debunked, the inclusion of Mace being emotionally hindered in that mission being confirmed, I don't see why you should use those fights to lowball Mace

There’s nothing from Windu pre his boost against Sidious that shows he handily defeats Dooku.

Mace pushed him off the mag-lev with the intention of killing him. Grievous only barely survived and Mace wasn't aware one of the gunships escorting them was actually commandeered by the Separatists and saved Grievous at the last minute. It took a few chapters for them to confirm this fact.
This coupled with the fact that Grievous met him blow for blow
For a brief exchange. It was no more than 30 seconds and that's seriously stretching it. More likely closer to 15 seconds. It was only a little longer than it took for Fisto to curbstomp the guards which in turn was a hilariously short period of time.
Windu's unpredictable style
Unfamiliar styles aren't a problem for Grievous's computers to crack. Random though it is, Vaapad still follows a specific fight pattern. It's not the unpredictability Dooku said Grievous and his guards were vulnerable too. Unconventional breaks from fighting patterns such as Mace cutting the roof causing Grievous to make a literal misstep is closer to the cantina brawler vs combat artist analogy. It was an unexpected move and the computers had no answer because it didn't come from a preordained fighting pattern, it's similar to how a chess player who spends too much time memorizing all the openings instead of focusing on mastering the key principles of opening theory, which often results in them being at loss at how to proceed when someone makes a move variation they haven't memorized or if a good but inexperienced player isn't following a specific opening but still has a good idea what they are doing.
environmental disadvantages
Grievous fights stationary on Hypori at certain points and in the RotS SN against Kenobi. The environment only makes it impossible to charge forward or make a quick retreat or use his legs as a weapon. It hindered his options but Grievous is a highly versatile fighter and I doubt a few extra leg sweeps or a little advance and retreat is going to seriously tip the balance in his favor against Mace.
Besides Dooku knows Grievous's style inside out(more than the General knows him, since Dooku literally trained him from the ground up and kept secrets from him), knows his shortcomings and how to exploit them better than anyone, and kept secrets from him to maintain an edge, and even despite this the general still presses him occasionally. That's at least as much of an advantage as the environment.

Even if Mace gets Vaapad, I can Dooku can win this. However it is real close and I haven't decided yet.

Even without Vaapad, Mace reacted to and countered blasts and lightning from Sidious despite numerous disadvantages. He’s still comparable to Sheev and Yoda, whereas Dooku falls a bit short. It’s a good fight either way as even Sidious can’t stomp Dooku, but Mace definitely wins.

Mace has a huge advantage when it comes to physical stats and shatterpoint. Dooku has more weaknesses. IMO Dooku is more skilled in combat and powerful than Mace but by a small margin and that may not be enough to beat the Jedi.
