Honestly Kazdan impresses me more. I think Jedi dooku stomps in sabers

more varied force user- kinetite, valor, tk, tutaminis, heal
better physiology- excellent spatial awareness and way of moving in battle, higher energy reservoir, stronger physically than humans, that's even without her added force augmentation to increase those attributes even further.
more unconventional and revolutionary duelist with makashi and ataru and how she incorporates the two chosen and mastered styles, more spontaneous, mobile and acrobatic.. able to overwhelm with ataru and then peel back into precision fencing, so she stays fresh and unpredictable.

i'm not saying jedi master dooku wasn't powerful, he approached windu in saber skills.. but mace himself back then was not mace windu in his prime. dooku was also not yet the sith lord who could electrocute opponents to death or rip through force barriers to choke, crush or hurl into rubble with ease. so that's why i think tcw-rots ti could really challenge him.

Realistically, in-universe it'd be a decent fight between the two.
