You're also trivializing this fight by focusing on just sheer numbers when the Dark Empire has two continent-busting superlasers, one planet-busting superweapon that can be fired from anywhere in the galaxy, the Emperor's Force storms which can transport ships and an entire fleet to any location in the galaxy and shred said ships effortlessly, and the World Devastators that are noted to be deadlier than the Death Star and impervious to fire from Imperial Star Destroyers and steal and transform enemy resources into the Dark Empire's assets in a way similar to the Star Forge. Even putting aside the quality of Force-users, the Dark Empire takes this in a spectacular stomp.

We don't know how quantum bombs would interact with shielding. Their blast radius isn't unique - baradium warheads are mentioned in the Millenium Falcon novel to still be lethal to the Falcon at like 100,000+km.

What is the Eternal Empire going to do against the sun crusher? Galaxy guns? Force storms?

One of them destroyed an entire fleet at Denon. Given they destroy on the subatomic level, shields won't do anything.
