Considering Rage amped Maul managed to put up some what of a fight against Sidious in a duel before being ragdolled suggests to me that he can probably beat Dooku. Why? Dooku has done better against Yoda than Maul did against Sidious.

Dooku was not overpowered by Savage through brute strength, though. If you listen to the audio cue you can clearly hear it's a lightsaber blow combined with a TK attack. In other words, Dooku and Savage clashed blades and Savage Force Pushed him. Savage has literally failed to overpower people physically weaker than Dooku with a single hit so it's an outlier anyway even if we take it as Savage actually disarming Dooku in a single blow.

Tbh, Dooku's disadvantage against strength is quite frankly overblown. The only combatant he's had trouble dealing with, in that department, is Anakin who you have not established as weaker than Maul. I think it's also worth mentioning that in both of the examples cited, Dooku manages to circumvent the strength advantage of the opponent (whether Savage even has one is still up for debate) through superior mastery and skill. These are two of Dooku's greatest edges over Maul, so even if we generously assume Maul has an edge in power or augmentation I'm still not convinced he can win based on that.

Maul is a different animal compared to them.

What makes you think Maul is stronger than Anakin exactly?

Dooku. Maul barely tested Sids. Dooku even when exhausted strained Yoda enough that lifting a pillar was a struggle for him.
