Favorite non-Force-sensitive characters

Usually people's favorite character lists are dominated by, if not exclusively consisting of, Force-users. This is no surprise: the spotlight is often on the atypical and extraordinary, and thus they are awarded the most exposure and characterization. But putting Jedi, Sith and the like aside, who are you guys's favorite non-Force-sensitives?
