luke by this point have been grown a lot after return of the jedi pretty sure he wins handily

I don't think we can quite gauge Luke's power level based of his short appearance in Mandalorian. While Dark Troopers maybe a formidable foe to non force sensitives, they are practically fodder to high tier jedi/sith.

Canon has Luke's power and skill equal to Vader's as of RotJ:
And when Luke momentarily tapped into the dark side, he became decisively superior to Vader:
The Mandalorian is set 5+ years after RotJ. Stands to reason that Luke's abilities would have continued increasing significantly by this point, given the incessant knowledge seeking/hording he was doing at the time(in addition to communing with the spirits of Kenobi, Yoda, and Anakin.)
tl;dr
Luke could potentially solo... But even if you lowball Luke, he is still a match for Vader by himself. Ahsoka is below both of them, but not so far below that she'd be a non-factor with Luke as her teammate. Really can't think of a scenario where Vader wins, tbh. /shrug

Luke lands a blow on his arm, then one on his side. The Sith Lord is forced backward until he reaches the bridge over the reactor shaft. Here he tries to strike back, but Luke knocks him down. He sprawls onto the bridge, lifting his lightsaber in a vain attempt to block whatever comes next. But Luke slashes with his saber, slicing Vader’s arm off. The metal limb tumbles down into the shaft, taking the lightsaber with it.

Luke is unquestionably above both Vader and Ahsoka individually. The problem is, it's impossible to judge his growth between RotJ and The Mandalorian. He's unquestionably improved, his form appears much more focused and refined when he was slicing through the Dark Troopers than it did when he cut down all of Jabba's men. I just don't know if his growth is sufficient to be able to take on a team of both Vader and Ahsoka at the same time. Either character could still put up a real fight against Luke. Against both at once? I could see him losing.
I see this fight playing out similar to Maul vs. Qui-Gon and Obi-Wan. Luke is undoubtedly the best combatant, and if he's able to keep the two opponents separated, he stands a very good chance of securing a solid win. But if they're able to leverage their teamwork against him, or if one of the combatants gets a rage boost from Luke killing their partner (because lets face it, Vader would likely be furious if someone killed Ahsoka in front of him, and Ahsoka would freak out if anyone killed Anakin in front of her), Luke might find himself in hot water.
Ultimately, I think it matters how much of a weak link Ahsoka is. If she's weak enough that Luke can consistently dismiss her with TK while he focuses on defeating Vader, this should be Luke's victory.

There's really no way of quantifying the growth that happened between RoTJ and Mandalorian S2. If Ashoka can act as a distraction, team can win.

I'm pretty sure you can say Luke claps Mando!Ahsoka based on portrayal. Then it's just Vader.

Luke should be stronger than both of them individually with Ahsoka being the weak link. But whether or not he wins boils down to if Ahsoka is strong enough to not be ragdolled by Luke. Because Luke at this point seemingly loves to abuse the Force.

Luke at this point is > Ahsoka/Vader individually... So if Luke fights smart here(ie. TK-spams Ahsoka while he cuts Vader down, for example) he can win. If he tries to engage both of them in sabers simultaneously, however, I don't like his odds.
It's also worth noting that Luke may have already discovered Jocasta Nu's cache of holocrons at this point(which would certainly help explain his obvious growth), but that's neither here nor there.

Luke is above either individually, but if Vader and Tano just use their team advantage he can't win (especially since we don't know how much he's grown)

I agree with what many others have said. Luke is above both of them individually but loses when the team works together. We don’t know how much growth Luke has gotten.
