Windu is definitely superior to them both per his fight with Sidious
Dooku by feats puts him slightly above Ahsoka.
So Windu>Dooku>=Ahsoka

Windu. More powerful than either and more skilled. The gap between canon Sidious and Dooku is pretty sizeable, to say the least.
