Kit Fisto appeared to be comfortably superior to a General Grievous who was said to be in no condition to fight, and held his own for a few seconds against Sidious.
Eeth Koth, while injured, managed to hold his own against General Grievous, and appeared to be only marginally inferior to Darth Vader in the 2017 comic.

Which of these two Jedi Masters wins in an all-out fight?

I'll back Koth because he has actually quantifiable feats. Fisto's hype in canon basically rests on beating a weakened Grievous who's level is unknown.
