Dooku to RotS Sidious. Sidious is way more powerful. Even a weaker incarnation of Sidious could choke Dooku across the galaxy. Sidious'un lightning overpowers Windu's lightsaber whose power was enhanced to Sidious'un level. AotC Obi-Wan can block Dooku's lightning without much trouble. When it comes to physicals, Sidious is way more faster, has superior stamina and physical strength, being able to stomp Maul and Savage effortlessly whereas Dooku struggles with lower combatants such as Ventress and Savage. Also Sidious' existence hinders Jedi's ability to use the Force more proficiently which is an insane feat. Also there is this basic scaling: Sidious>Yoda>Vjun Dooku>Dooku.

While I find issue with much of your reasoning, your conclusion is nonetheless correct.

IH Kenobi to Dooku. I don't think if we drained the vast majority of Sidious's reserves, had him be hard-pressed by a superior opponent and made him be attacked by Dooku from behind he'd be able to just stomp him with TK which is pretty much what happened with Dooku vs Kenobi.

Well both are better than Dooku, Sidious is just simply moreso
