Dooku dismantles him skillfully in sabers and dominates via the force. If Dooku doesn't stomp vader all out, it'd be pretty close to it.

I don’t hold Dooku very high. It’s just that I find Vader fairly unimpressive (not sub-tpm kenobi, though, that is just a joke). Or more precisely, I find him inconsistent. He’s hyped up tremendously in the dark times novels (Coruscant nights, last of the Jedi) but his showings just don’t live up to that. Nah, unless if it’s G Canon Vader. I wager that C Canon Vader would win because he’s not any less powerful than Anakin, and he’s also got the benefit of being familiar with Dooku’s tactics and technique, whereas Dooku doesn’t because Vader’s technique is different than pre-suit Anakin’s. He’s also stronger and more durable, though Dooku is faster and more agile.

If people want to reconcile everything and not just accept Lucas and most writers of the EU have a completely different perspective on Vader's power, one could argue 18 BBY Vader was his combative peak. He's much younger for one - 24 verses mid-forties, and he was likely more active in hunting down surviving Jedi and motivated trying to reawaken his Sith potential. By OT it seems that he left most of the grunt work to his minions and he could have grown complacent and decline with age and lack of motivation do to his knowledge he could never surpass his master. Stagnation could have hollowed him to a "shadow of his former self" by ANH. You could also argue I guess that the discovery of Luke reawakened that spark and his drive to overthrow the Emporer hence him "growing far more formidable" by Empire though I wouldn't argue he's better than 18 BBY Vader, just much better than "a Shadow of his former self".

Re read/watch the IH fight between Kenobi and Dooku. That is a good approximation of what would happen were Vader to attempt to fight Dooku. Only Dooku won't get stonewalled in sabers like he did against Kenobi.

Kenobi didn't even stonewall Dooku lol. Blocking a few strikes isn't a stonewall.

Why only "slightly"? As soon as Dooku decided to take things seriously and remove Kenobi from the equation Kenobi got TKd twice in a short space of time. And in the second scenario, Dooku was extremely disadvantaged. What's the argument against this exactly? That Kenobi didn't raise a Force defence in time, and that in an "accurate" representation of their abilities he "stonewalled" Dooku (if you can even call that section of the fight a stonewall)? Give me a fucking break. It's clear narratively that Kenobi was nothing to Dooku, and that Anakin is the only one who had a shot of beating him.
