Canon Maul is more skilled than Canon Dooku but it's not been stated that he's more powerful than Dooku. Dooku has demonstrated better telekinesis and can also produce Sith Lightning, whereas Canon Maul can't (Legends Maul can however).

Maul should win R2 and R3, despite Dooku's edge in Force mastery. R1 is debatable, both because Maul felt a single blade was limiting and because it's not that well suited for the kind of relentless aggression that tipically overwhelms Dooku.

Rebels Maul annihilates all, but SoD gets his shit kicked in.

Dooku wins round 1, Maul wins round 2, not sure about round 3. @Rohirrim it appears that canon believes that there is a dramatic difference between Maul with a single bladed lightsaber and Maul with a double bladed lightsaber because The AEYNTK list ranks Maul above Dooku, but only when he's equipped with the double bladed lightsaber, and Lightsabers: A Guide to the Weapons of the Force says that Maul finds that a single blade is far too limiting:

"Eager to destroy the Jedi, Darth Maul felt that a single-bladed weapon was far too limiting." -- Lightsabers: A Guide to the Weapons of the Force (2018 edition).

Matt Martin has said that the list is true, didn't he?

Since it's SoD, Dooku decimates. If this was Maul as of his prime in Rebels he'd probably destroy though.

His showings. He's  above Ahsoka as of Rebels (Inquisitor performances plus 1 and 4, 2 and 3 logic) while holding back and trying to look feeble. He's easily near Rebels Vader. To contrast, TCW S7 Maul (his probable PT Prime) looks like Ahsoka is going to beat him.

So let me get this straight: You're assuming that Rebels Maul is better than TCW Maul on the speculation of what happened in Maul's fight with Ahsoka in TCW S7... A fight that we haven't seen yet. This isn't proof, this is speculation. Rebels Maul is above Rebels Ahsoka, but not while holding back and trying to look feeble, he dropped that act the moment he started fighting the Inquisitors, and it's even possible that Malachor is a Dark Side nexus. Moreover, comparing their performances against the Inquisitors is assuming that ABC logic is true, but it isn't:

You're ripping the intent out of its context. Maul was pretending to be weak and feeble when he met Ezra so that he can gain his trust because Ezra a child, Maul dropped the act when Ezra re-introduced Maul to Kanan and Ahsoka, who evidently weren't naive enough to fall for Maul's self victimisation act. Moreover, the idea that there's a big gap between Ahsoka and Maul in the form of this "serious Maul > holding back Maul who's pretending to look feeble > Ahsoka" argument completely self destructs because Maul had a 2 minute fight with Ahsoka, he is furious and frustrated with Ahsoka for getting in his way, and yet their fight resulted in a stalemate, not that I think Maul would've lost had the fight continued, but it's illogical for Maul to deliberately waste time holding back in his fight with Ahsoka because he is clearly hell bent to get to the Sith holocron, corrupt Ezra into becoming his apprentice, exact revenge on all his enemies, which is shoved in our faces because he says "Power will be mine, Ezra... Will be mine! And there's nothing you can do to stop me!" 

As for Sam Witwer's statement about Maul being physically past his prime, Witwer was heavily involved in the creative process of the show and has been contributing his own ideas to Maul's character ever since he started voicing Maul, and his word hasn't been contradicted either, plus Matt Martin has also reconfirmed Sam's statement, here's what Martin said:

Gabe Dawson: Hey Matt! Do you know if Maul's powers waned between TCW and Rebels? In TCW and SOD, he's fighting legends like Obi-Wan and Mace, but in Rebels he seems a lot more grounded. Kanan even seems to think he could beat Maul, despite Maul being trained by Sidious. Thanks!

Matt Martin: He's older and out of practise by the time of Rebels, for sure.

I just want to ask, what is this supposed dialogue in Twilight of the Apprentice which supports your idea that Ahsoka beat Maul in their last engagement?

The dialogue I recall is, "Running away again, Miss Tano?" Which clearly implies Ahsoka ended up running away from Maul at the end of their previous duel. So I highly doubt Ahsoka actually beast Maul in TCW S7.

Not necessarily bested, but at least a good fight, as their demeanor suggests it was a total stomp.
