I mean it doesn't have to be in that order, either team can switch opponents mid fight or they start the fight with Kenobi facing Dooku and Anakin facing Maul. But would you still agree with the verdict if its Kenobi vs Dooku and Maul vs Anakin instead?

depend who fights whom .
if dooku faces obi wan and ragdolls than team two wins 2v1 against anakin .
if anakin fights dooku and he gets his IH rage boost he decaps dooku .
RoTS kenobi would take out maul 1v1 in a prolonged duel , but if anakin joins him maul goes down very fast .

Rules stipulate in character and no teamwork buff are in place so yeah they'll go in that way.
If it swaps Kenobi and Dooku can stalemate for a prolonged period and Anakin smashes through Maul way faster than he would Dooku. Same result.

RotS Dooku was holding back against Anakin and was exhausted. Not to mention he had the chance to kill Anakin during RotS. I don't think Anakin could kill Dooku if he is willing to end Anakin and not hold back. Maul and Kenobi are almost equals but Maul's strength in the Force is greater thus he should win imo.

If Anakin is in his A game, he can very well solo. Either way team 1 wins as Maul is the slight weak link

He held back for a small portion of the duel. Once Anakin cut the crap, he started battering him. And during that portion of the duel, he definitely wasn't holding back. Team one solidly. Even if Kenobi goes for Dooku and Anakin for Maul, Obi can hold Dooku enough for Anakin to defeat Maul and the two then overwhelm Dooku.

but than again

it is ragdoll time and anakin can´t beat maul in 5 seconds .
although case can be made even then rage fueled anakin might solo in a fight of his life .
if it is maul vs kenobi and anakin vs dooku team one wins handily .

Indeed he held back for a while but in the end when he comprehended how serious the situation was, it was too late. He was already fatigued when Anakin tapped into his rage though. Had they fought 1v1 with Dooku willing to kill Anakin from the beginning, I think he'd succeed. Sidious always had plans for the Chosen One and Tyranus knew that.

He was getting tired but exhaustion didn't start to set in until Anakin started hammering him. He also restored his reserves when he Force blasted Kenobi.
He calls on his power just before the duel begins:

And the same wording is used to describe his replenishing of reserves before the Force push when Kenobi was busy maintaining his defensive wall:

So while he probably wasn't completely fresh, when Skywalker continued his attack, his fatigue should have been minimal and hardly a critical factor at this point. The exhaustion Dooku experienced afterward was largely attributed to Skywalkers power blows; a parry cost him more energy than it took for Dooku to push Kenobi. If both had been serious from the get-go SKywalker still would have exhausted him, if we are considering the novel which is the only source that really emphasizes Dooku exhaustion; the script merely has him and Kenobi "tired" which is hardly critical.
Now, this is of course based completely on the novel. I'm of the opinion that the novel is an outlier in regards to how well Dooku deals with strength; Grievous by feats is physically stronger than Anakin and Dooku seem to handle his power blows just fine without any visible strain. That said both the script and the movie choreography has Anakin pushing Dooku back on his own. It's only when Anakin is mentally hindered does Dooku have a real edge over Skywalker. The script still strongly implies base Anakin is the strongest of the three.
