Sidious has all of Plagueis's knowledge.

... Mastery and knowledge are two entirely different things. Not to mention Sidious isn't able to utilise MM which gives Plagueis an advantage that Sidious doesn't have. And just in general master-apprentice relationships seem to have the cards rigged in the master's favour as can be seen by numerous examples which gives Plagueis an advantage. In fact, though I don't put much stock into author quotes Luceno has said that Plagueis could find a way to undermine his apprentice suggesting that Plagueis perhaps possesses ways to overcome Sidious's power advantage.

Side Note: IIRC Sidious also notes in the novel that he wasn't 100% about fighting Plagueis because of the latter's "sorcerers ways" which once again supports my thesis that Plagueis perhaps has greater mastery than Sidious.

Hold up a sec. Technical skill is an entirely relevant factor when the Force Users are near equals and could be the deciding factor which tips a lightsaber duel in favour of one or the other.

And if the Force Users are near equal couldn't we say the same for technical skill? If Sidious is slightly more powerful and Plagueis is slightly more skilled who would win the fight? I'd honestly given the edge to the person with greater technical skill because that's honestly more likely to come into play than a slight power advantage imo.
