Why do you think Rey Skywalker picked the Skywalker name. I understand why she didn't pick palpatine, but from all the Skywalkers, only Luke was good. She didn't seem to have a great relationship with Luke. I thought it would make more sense for her to be just Rey. Or even Rey Solo considering she was in a relationship with Ben Solo. Or Rey Organa considering there are no evil people with the Organa name.

Because terrible writing.
Oh a real reason....because the Skywalkers were heroes or something so continue that name for the galaxy, or whatever.

She picked “Skywalker” because she believed she (with Luke and Leia’s permission) was carrying on a legacy that inspired hope and peace throughout the galaxy, whereas the name “Palpatine” only inspired fear and tyranny.

Exactly. Luke & Leia even give her the "go ahead" look before she says it. Why would they? Shmi didn't make the Skywalker name famous. Anakin did, and so did Luke and Leia.
