RotS Kenobi vs SoD Maul vs DD Vos

Who wins?

Hard to tell, but I would bet on Kenobi, if only because of his levelheadedness and defensive style, which seems suitable in these particular matchups.

I think that DD Vos can take this, knowing that he is defeat Dooku who is above both RotS Kenobi and MaulSoD

There's no evidence that Dooku is above Kenobi. He was defeated by Anakin, who Kenobi stalemated in both a duel and a TK contest. Kenobi did poorly against Dooku because the latter had a stylistic advantage.

Vos only beat Dooku because of his amp and unpredictable fighting style, which Dooku was unable to counter due to the rigidness of Makashi. Obi-Wan has no such weakness.

Agreed, styles make fights.

Vos wasn't any more "amped" than Dooku is always. They're both guilty of using steroids. But yeah ABC logic doesn't work with evenly match foes that have three distinct styles, weaknesses, and approaches to combat, and I don't see Vos's unpredictable style befuddling Kenobi, in fact, his aggressive approach would likely play into Kenobi's technique. 

That said three-way fights between three evenly matched foes are hard to predict. So I really can't be sure, too many variables and random factors. Anything could happen.

This is Vos as of his second fight against the Count. The rage amp was in his first fight, at the beginning of his second duel Dooku himself says he sensed Vos is “calmer”

without amp: kenobi 
with amp: vos
