While Yaddle's parity to Yoda quotes are canon, IIRC in Shadow Trap we get a pretty clear cut side by side comparison between the two and they are comparable, though Dooku is more skilled and has better feats. I would still side with him.

Dooku. Ki-Adi goes down in an okay fight and Dooku beats Yaddle. Just to point out that the quote can also just be saying Yaddle is also Force-sensitive.
