Lightsaber blades: one vs two

Figured we could get a little discussion going on why would a character choose to employ two blades instead of one or viceversa. Some questions that come to mind:
Please share your thoughts on this topic. Any other relevant situations and examples you can come up with?
- Are two lightsabers always better than one? If so, why do some characters normally use one while others use two? Possible explanation: it's a matter of style/preference.
- Why would AOTC Anakin, who normally uses a single lightsaber, try to use two against Dooku? Possible explanations: two blades are better suited to overwhelm Dooku's Makashi / it was a desperate move to gain the element of surprise.
- Why would Obi-Wan use two blades vs Maul and Opress? Possible explanation: two blades are better when dealing with multiple opponents (this lends the question of why didn't Sidious wield his two lightsabers against Mace's team).
- Why would Anakin use two blades against Barriss? This one I can't rationalize at all. If he thought he was at a disadvantage against a dual-wielding opponent, then how come he normally uses a single lightsaber for duelling? Plus, he did better after losing his second blade.
- Why would Maul initially use a single blade against Sidious, yet switch to two after Savage was killed? Possible explanation: one blade is more practical when tag teaming.

One lightsaber is better, it allows you to use the force more often in a combative situation

Dual blades are more aggressive, sometimes thats what the situation calls for. Sometimes you want more control so use a single. *shrugs*

Hmm, possibly the need for two blades allows for a better defense against a fast opponent?
Although I always theorized that to make Jar'Kai more effective a shoto would be required as opposed to another normal saber.

More versatility and protection against multiple foes, and more opportunity for a fast-paced offensive if desired.
